As a person who is Wheat and Gluten sensitive I find that my diet is very limited. Also as a person who has eaten any chicken/beef/lamb/duck etcfor two years my choices are further limited when I go out to eat.
And now I have just given up eating fish to see if there will be an improvement of my moon time pain so I have been struggling to cook different food.
So being Gluten and Meat free can cause challenges to creating a good meal, that just wasn’t about Lentils and Chickpeas.
I had forgot about the wheat free bread crumbs in my cupboard..
My friend Mandi gave me this delicious food basket for my birthday back in July . The basket included a wheat free pancake mix , biscuits, delicious Pukka Tea and All Purpose breadcrumbs from Organ..
After I had snacked on the basket’s contents for a number of weeks the breadcrumbs were banished to the cupboard was they didn’t do much during the making of my wheatfree apple crumble.(I like to make my own bread crumbs for that).
Anyway deciding to do something different I saw vegatarian kievs in the super market when I nearly cried that I was unable to eat them..so I decidedto make my own..

2 pieces Frozen of Quorn *Fillets
3/4 cups of wheat free Breadcrumbs
3/4 cups of Wheat free Breadcrumbs
2 table spoon of butter *
5 tablespoons of chopped Coriander or Parsley ( I prefer coriander)
1 Clove of Garlic chopped
1 egg*
1 tablespoon of mixed herbs
1 Cup of Oil ~For oil I used Coconut oil to fry as its better.
Steps
1>Chop Ingredients for filing ie Parsley, Garlic, mixed herbs etc and mix together
2. Soak the frozen fillets in hot water to soften
3. Cut open the fillets (they are quite thin and may spilt but this is ok as you can reseal them afterwards during the frying process)
4. Cover the piece in flour and then roll them in the egg.
5. Coat the pieces in the wheat free bread crumbs ( I did the lazy option and mixed the flour and breadcrumbs together).
6.Place your pieces in the refrigerator for 30 minutes
7. Heat the oil medium heat then fry the pieces until golden brown (approx 5-10 mins).
8. As a rule (which I learned from my mother ) put the pieces in the oven just to ensure that the pieces cock throughly inside.
10. Garnish with parsley I had mine with a homemade tomatoes salsa and lemon water to break up the acid.
*For vegans you can use egg substitute and soya butter as an alternative.
